Mushroom Japchae (Korean Glass Noodles) 

Ingredients:

  • 200 g glass noodles (sweet potato noodles)

  • 1 cup mixed mushrooms (sliced)

  • 1 carrot (thinly sliced)

  • 1 bell pepper (sliced)

  • 1 small onion (sliced)

  • 2 cloves garlic (minced)

  • 2 tablespoons soy sauce

  • 1 tablespoon sugar

  • 1 tablespoon sesame oil (optional)

  • 1 tablespoon cooking oil

  • Salt and pepper (to taste)

  • Sesame seeds (optional)

Instructions:

  1. Cook the noodles:
    Boil noodles according to package instructions (about 5–7 minutes). Drain and set aside.

  2. Stir-fry vegetables:
    Heat oil in a pan. Add garlic and mushrooms, cook for 2–3 minutes. Add carrot, onion, and bell pepper. Stir-fry until soft.

  3. Mix noodles and sauce:
    Add cooked noodles to the pan. Add soy sauce, sugar, sesame oil, salt, and pepper. Toss everything together for 2–3 minutes.

  4. Serve:
    Sprinkle sesame seeds on top and serve warm.
