Mushroom Japchae
Mushroom Japchae (Korean Glass Noodles)
Ingredients:
200 g glass noodles (sweet potato noodles)
1 cup mixed mushrooms (sliced)
1 carrot (thinly sliced)
1 bell pepper (sliced)
1 small onion (sliced)
2 cloves garlic (minced)
2 tablespoons soy sauce
1 tablespoon sugar
1 tablespoon sesame oil (optional)
1 tablespoon cooking oil
Salt and pepper (to taste)
Sesame seeds (optional)
Instructions:
Cook the noodles:
Boil noodles according to package instructions (about 5–7 minutes). Drain and set aside.Stir-fry vegetables:
Heat oil in a pan. Add garlic and mushrooms, cook for 2–3 minutes. Add carrot, onion, and bell pepper. Stir-fry until soft.Mix noodles and sauce:
Add cooked noodles to the pan. Add soy sauce, sugar, sesame oil, salt, and pepper. Toss everything together for 2–3 minutes.Serve:
Sprinkle sesame seeds on top and serve warm.
